Hi Wildflower,
Congratulations on gaining control over stress eating, speaking from personal experience I know how hard it is.
Maybe eat some fruit an hour or so before you go to bed: a banana or an apple. That might tide you over until morning. I know what you mean about drinking water, I end up getting up in the middle of the night to go to the bathroom.
