Ah, that Steve Martin can do no wrong in my eyes...but then that belongs in the "celebrity crush" thread...
Character development...."The Player" is what comes to mind for me- esp. if you're in to directing and how movies "look"...it's about a movie exec (Tim Robbins) who starts getting threats from a young screenwriter...he takes the law into his own hands and...anyway, it's awesome. It's really a black comedy/thriller/satire about Hollywood greed and power...
For laughs- "Dirty Rotten Scoundrels" is a hoot- oop- there's my Steve Martin bias showing again...
