Anyone Want Some Easy Recipes?

Posted by Susan J on October 18, 2003, at 12:15:08

I don't know about any of you, but when I'm bummed out of my mind, the last thing I want to think about is making healthy food. In order to cope with that, I've collected some very fast and simple (often cheap) healthy recipes (oh, and they are tasty, too) for dinner for those times I don't feel like cooking much....

I'm more than happy to share if anyone's interested. And even if you don't feel like cooking at all, perhaps they are easy enough for your significant other to cook in your stead....these recipes are tough to mess up, too.

I'm at work and don't have any of them with me, but I can post them later tonight.

They include stuff like:

1. creamy spinach (or brocolli) lasagna
2. roasted chicken and country vegetables
3. chicken/rice/veggie/cheese caserole that's yummy.
4. vegetarian chili (a little time consuming, but freezes well) and you can add beef or chicken if you want....
5. gingered sea scallops and bok choy
6. black bean enchiladas

And of course, if any of you have recipes you'd like to share, I'm all *eyes* too!

Oooh, the creamy spinich lasagne sounds realllly good!!!

I love spinich, and love lasagne.. but find the whole thing of making 2 different sauces etc just toooo much hassle (and causes way too much wahsing up!)

the recipe for that would be fabulous!!

I love this one the best! It's really easy, just throw a bunch of stuff in a sauce pan like the garlic, ricotta, onions, spinach and warm it through, then layer it between dry uncooked lasagna noodles (you can just wet them down a bit and put them in). Bake for 25 minutes. Done!

Yummy!

I'll post it for you tonight. Too afraid to do it by memory, even though I just made it...

Susan
