I don't know about any of you, but when I'm bummed out of my mind, the last thing I want to think about is making healthy food. In order to cope with that, I've collected some very fast and simple (often cheap) healthy recipes (oh, and they are tasty, too) for dinner for those times I don't feel like cooking much....
I'm more than happy to share if anyone's interested. And even if you don't feel like cooking at all, perhaps they are easy enough for your significant other to cook in your stead....these recipes are tough to mess up, too.
I'm at work and don't have any of them with me, but I can post them later tonight.
They include stuff like:
1. creamy spinach (or brocolli) lasagna
2. roasted chicken and country vegetables
3. chicken/rice/veggie/cheese caserole that's yummy.
4. vegetarian chili (a little time consuming, but freezes well) and you can add beef or chicken if you want....
5. gingered sea scallops and bok choy
6. black bean enchiladasAnd of course, if any of you have recipes you'd like to share, I'm all *eyes* too!
