Jujeh Kabobs (Persian chicken kabobs)
1 package (1.5 pounds?) boneless-skinless chicken breasts, cut into large bite-sized pieces
1 large onion, chopped fine
approx. 1 cup olive oil
1-1/2 tsp thyme
1/2 tsp fresh ground black pepper
2 lemons, juiced
1. In a large food storage container, add the onion, thyme, pepper, and about 1/2 cup oil. Mix well.
2. Add chicken pieces. Mix well.
3. Add enough additional oil to completely cover the chicken. Mix well.
4. Cover & place in refrigerator for a minimum of 4 hours. I ususally marinate for 48 hours. Stir occasionally.
5. When ready to cook, place chicken pieces on skewers.
6. Cook on grill, sprinkling lemon juice on the chicken as it cooks. Turn at least once. Cook only until golden-brown.Serve with vegetables and pilaf
