My first reaction is to look at the Stupimax, errrr, Topomax. It is strongly associated with fatigue, but it tends to lead to weight loss, not gain.
If the pancreatin is causing a problem, it's a simple matter to stop taking it. You may even be sensitive to something in it (the enzymes are foreign proteins, as far as your body is concerned).
See what happens when you go off the pancreatin.
