I believe Nikki is talking about the system time of the machine. This time is quite important - it's on all the time/date stamps of any files touched among other things.
Changing it isn't that simple. Where I work we're on a network that periodically resyncs the time with the outside world.
I guess I *could* change mine to be on GMT or something else and all would be ok (files time/date stamps also keep the time zone) but it would be strange for most things = right now I'd see it and pack up to go home.
