If my diet is nutritionally empty, my GI tract doesn’t protest at all. Changing my diet to one more in line with actually wanting to live for a while, well, the tummy and south doesn’t know how to react as they are so shocked.
‘tis a adjustment I know, I just needed to “vent” and I realize it’s probably too much info to share.

I think that's normal. Can you introduce healthy things really slowly? One at a time? I think once your system gets used to them again, you'll have no trouble. :)
